FRUIT PIZZA



This is a beautiful dessert to take to a party.  I've made this a few times and it's always a hit.

INGREDIENTS: (Giant Sugar Cookie)

2 3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 cup butter, softened

1 1/2 cups white sugar

1 egg

1 teaspoon vanilla extract

DIRECTIONS:

1.         Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.

2.         In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll dough into large ball, then gently flatten with rolling pin to a size that leaves about 2" clearing on the pizza pan.

3.         Bake 8 to 10 minutes in the preheated oven, or until golden. Let cool before topping with cream cheese spread.

INGREDIENTS: (Cream Cheese Topping)

8 oz. pkg. low-fat Philadelphia cream cheese
Vanilla

Spread topping all over giant sugar cookie.

INGREDIENTS:  (Fresh Fruit Topping)
*  These are just approximate amounts as you work through the fruit to see how you want to create your design.  You can also choose different fruits/colors that you prefer, i.e., canned mango, pineapple or peach slices, etc.

4-6 oz. fresh blueberries
2 kiwis (sliced 1/4" thick, then halfed width-wise)
2 bananas
l lb. strawberries (sliced thin length-wise)
1/4 cup apple jelly-microwaved to liquify (or any marmalade, orange is great-this is just used to glaze the fruit after topping the cookie and cream cheese).

Top cream cheese with above fruits and brush gently with jelly/marmalade.

jonnie you are a true domestic goddess! you perfected it. i still have not tried it for my little cooking class. i am inspired.
